You have an opportunity with Sales Organization field filled. When creating a follow-up sales quote from this opportunity, the Sales Organization from opportunity is not displayed in the sales quote.

Reproducing the Issue
Go to the Sales work center.
Open the Opportunites view.
Search for Opportunity ABC (where ABC stands as ID of an opportunity with sales organization field filled).
- Open Opportunity ABC.
Go to the Sales Documents view.
Click in the New button.
Notice the Sales Organization field not filled (if available in the Sales Quote Quick Create).
Fill the required fields.
Click in save and open button.
In the Sales Quote, you will notice the sales organization field not determined.
In the opportunity ABC, the Sales Unit and Sales Organization were manually entered by a user, not determined automatically. Thus, in the follow-up sales quote the Sales Organization will not be determined automatically. Manual entries override party determinations, including for follow-up documents.
If you need a custom logic to determined automatically a sales organization in a follow-up sales quote from opportunity with sales organization/sales unit information manually entered by an user, you may contact your implementation manager to help with such request or approach directly the SAP Cloud Service Center (email@example.com).
