When external users self-register into LMS via a custom site, they are automatically assigned the system Default User role. Is it possible to configure the sites so that external users are automatically assigned a different role?

The initial role assigned to an external user is the Default User role. This is hardcoded on LMS and there is no possibility to change via the LMS Administration Interface. You could change the external user's role, however the default one that is used when the external user is created could not be changed.
