During the organizational assignment replication process, if the position assignment is delimited in EC, then also the other relationships created are delimited on the same date.

The system behavior is correct. For the employee org assignment process the employee is the leading object and all assignments are related to the position of an employee.
This means that as soon as this relationship is delimited (f.i. employee is terminated) all relations will be delimited (not only the holder relationship but also relationhips to org unit, cost center, job,...) as all these relationships were created from the employee object. If the position is not anymore assigned to the employee they should also be delimited.
Despite the above mentioned, it could be an alternative to avoid the delimitation in the other relationships. It would require to prevent the creation of the relevant relationships, other different than P-S which will always be created through the Org. Assignment replication. For this, please review this section of the integration guide in this link.
Then, you could use the generic object replication (Org. Structure) to replicate all the other relationships, and such relationships would not be delimited in case the P-S is delimited.
